Calling all North Dakota animal agriculture producers and all-around livestock fans! This year’s Summit has a new look with the addition of a Livestock Development Trade Show, professional meat preparation demos, 2022 market and construction outlooks and more. The day’s host will be NDSU Alum and National Pork Board Past-President Dr. David Newman, an Associate Professor of Animal Science at Arkansas State University. He and his family have a diversified livestock operation that includes local and direct meat marketing across the U.S.

Agenda Update!

New Event Chef Demonstration:  I will describe ideal features to look for when choosing a beef brisket to BBQ, including texture, color and the amount of fat present.  I will then demonstrate how to trim the brisket, and apply a rub to prepare it for cooking.  While re-setting the station to prepare fully cooked food, I will lightly touch on the cooking process, and variations that most people will use to cook their own brisket (temperature, wood, wrapping etc…).  I will then demonstrate how to properly cut a fully cooked brisket, pointing out the difference in the two muscles and their grain directions.

About the Chef:

Judd (Justin) Eskildsen was born and raised in Moorhead, MN, and has been in love with cooking since he was old enough to help his mother with meals for the family. After 8 years of being an industrial welder, Judd realized that his heart never truly left the kitchen, and he decided to follow his dream of becoming a chef. Since then, he has worked in some of the best restaurants in Fargo and Moorhead, and is the owner/operator of The Backyard Grilling Company, opening soon in Moorhead, MN
